Being away at college means more independence, and for many, that means mealtime becomes a matter of convenience versus health and nutrition. But just because you’re not a culinary master doesn’t mean you have to live off of pizza and fast food. Here are some simple, healthy recipes college students can make in a flash, even if all you have is a mini-fridge and a microwave.
Breakfast
It’s the most important meal of the day.
Overnight Blueberry Maple Oatmeal
These take about 3 minutes to prep, and can be grabbed on-the-go before class. Customize with your own mix of fruits and spices.
2 Minute French Toast In A Cup
Literally, any bread will work. And you don’t even need a kitchen, just a microwave.
The Rest Of The Day
Lunch, dinner or midnight snack. We all know that when you’re on a college-student schedule, regular mealtimes can become obsolete.
We all love Chipotle, but a student budget probably doesn’t. Here’s an easy alternative, and you can add meat of your choice to make it non-vegetarian.
OK, we know that mason jar salads aren’t a new concept. Here’s a recipe for an incredible Greek salad but really, you can get creative and fill your jar with whatever leafy greens, vegetable toppings you like.
Try out any of these easy wraps for filling meals that can be thrown together just about anywhere, and eaten any time of day.
OK, so maybe pizza isn’t the healthiest option. But sometimes you get a craving you can’t ignore, and these will satisfy that craving in a healthy serving size, with ingredients you can trust and manage yourself.
Dessert
We didn’t forget about dessert. Here are some recipes that let you indulge without packing on the Freshman 15.
These will satisfy a craving for dessert without all the sugar that’s usually included. Bonus: if made without chocolate chips, these are also dog-friendly treats.
No-Bake Chocolate Chip Cookie Balls
By using a banana as a binder and dry oatmeal for structure, these cookie balls are both incredibly simple to make and pretty healthy!
Single-Serving Deep Dish Chocolate Chip Cookies
Just like with the English Muffin Pizzas, sometimes the name of the game is simply portion control.
Being away at school or confined to a dorm room doesn’t mean you have to sacrifice a healthy, well-balanced diet. With these recipes, college students can prepare simple, quick meals that leave you full of energy and won’t break the bank.
